About the Recipe

I love snacks but I REALLY love smart, functional snacks!

These gluten-free energy bites are ridiculously tasty and super easy to make. They’ve been approved by every member of my household! There is no strict recipe to follow, zero prep, zero baking and minimal clean up involved with this one.

Ingredients

  • 1 tbsp of almond flour

  • 4-5 whole dates

  • 1 tsp of honey

  • handful mixed nuts

  • scoop of pumpkin seeds

  • scoop of unsweetened shredded coconut

  • 1 tsp hemp seeds

  • 1 tsp ground flax


NOTE: ingredients don't need to be exact! It's a bit of an experiment

Preparation

  1. throw everything into a blender or food processor for a few seconds

  2. mix a bit more in a bowl until you get your desired consistency

  3. use your hands to form the balls

  4. set balls on a plate and pop them into the fridge to set


These are also great to freeze! They only take a couple short minutes to thaw.
